Favorite Side Salad
This is by far my favorite salad and the best part is… it’s super easy to make, delicious, refreshing & goes with pretty much everything!
// Needed:
1/2 of a chopped red onion
1 can of rinsed chickpeas
1 large cucumber
1 large tomato
juice from half of a lemon
2 tbsp red wine vinegar
2 tbsp evoo
salt & pepper
dill
red pepper flakes
cilantro
// Details:
In a medium sized bowl mix together the chopped onion, chickpeas, cucumber & large tomato.
Add lemon juice, red wine vinegar & evoo
Toss in all of the seasonings and mix again
