Favorite Side Salad

Delicious, zesty, fiber packed salad

This is by far my favorite salad and the best part is… it’s super easy to make, delicious, refreshing & goes with pretty much everything!

// Needed:

  • 1/2 of a chopped red onion

  • 1 can of rinsed chickpeas

  • 1 large cucumber

  • 1 large tomato

  • juice from half of a lemon

  • 2 tbsp red wine vinegar

  • 2 tbsp evoo

  • salt & pepper

  • dill

  • red pepper flakes

  • cilantro

// Details:

  1. In a medium sized bowl mix together the chopped onion, chickpeas, cucumber & large tomato.

  2. Add lemon juice, red wine vinegar & evoo

  3. Toss in all of the seasonings and mix again
